Update ROADMAP.md: Mark Issue #63 (z-order rendering) as complete

- Add z-order rendering to recent achievements
- Update alpha blocker count from 3 to 2
- Archive z-order test files
- Next priority: RenderTexture concept (#6) - last major alpha blocker
